Yucca-y Dinner

My morning started with a Liberte plum and walnut yogurt, plus a little Reese’s cup that found its way onto my desk. Whoops…

Around 9AM, I had an unpictured Pure brownie bar.

For lunch, it was leftover stir-fry and rice…

And then…a donut.

I like to harass one of my co-workers about bringing donuts to work, and after my explicit instructions to not bring donuts on Friday, when I wasn’t at work, she brought them on Friday. Tsk! But then when she went out to get lunch this afternoon, she stopped and got me my very own special donut at Dunkin Donuts! Yay! I was happy. :)

The donut was the first thing with wheat in it that I’d had since dinner on Friday night, and afterward I grabbed a mini KitKat and later (when I was staaaarving) I walked to the store and got this, which may or may not have had wheat in it…

My stomach was kind of upset all afternoon. But I don’t know whether it was because I ate something with wheat in it or for some other reason. But it has been noted here for posterity!

I ended up working for 10 hours today, and I was very proud of myself when, instead of crawling to bed and taking a nap upon arriving home, I instead put dinner on pretty much as soon as I walked in the door. Well, as soon as I walked through it the second time, with the dog in tow. Tonight’s dinner plans included two new items: lentils and yucca. I made lentil sloppy joes and yucca fries!

On the side I had some grapes. See all that ketchup? After I squeezed the stuffing out of the bottle for the joes, I sat the bottle on end and resumed cooking. Once everything was done, I tried the ketchup again, and all of that came out. It was crazy!

The yucca fries were pretty good…worth setting my smoke alarm off twice. I seasoned them with Ozark seasoning. They didn’t taste quite like potatoes–they had a distinct flavor, and they were…meatier? They kept their shape and got all crunchy on the outside.

The lentil sloppy joes were pretty good, too!

It was obvious they weren’t made with hamburger, but I thought the texture was similar and the taste was pretty close to tasting like sloppy joes.

I have leftovers for lunch tomorrow. Lots of leftovers. And leftover lentils. This was the first time I made them and I made way too many!

Gotta stay up another hour and a half or so to watch House and take a shower…I’d much rather go to sleep now, though…
