Let’s go backwards!

My dinner tonight was so good. So, so good. I riffed on the “Hurry Curry” recipe in my Abs Diet book and made this amazing curry with chicken and onions and broccoli served over brown rice. Amazing.

It was beautiful and delicious.

So beautiful and delicious that I’m posting a larger-than-normal close-up.

So good. I don’t know why, because I don’t remember it being this good when I’ve made it before. It might’ve been the sauce–I used Greek yogurt instead of plain yogurt for the first time–or it might’ve been that my curry powder has aged and perhaps mellowed out. But it was insanely delicious, with just the right amount of heat and the perfect ratio of sauce to chicken/veggies/rice.

I had  to put the leftovers away for lunch before I ate them for dinner.

The rest of the day…I was up early enough this morning that I spent an hour dinking around before I did my run for the day. I knew if I didn’t get it in early I wouldn’t do it at all. I managed to keep the treadmill on 4.0 MPH the whole time–I used to not be able to do that! I’m crazy slow but that’s okay.

During my lunch break, I shelled out $60 to sign up for the Raleigh City of Oaks Rex Health Care Half-Marathon in November! I’m still working on my endurance and will undoubtedly run several smaller races between now and November (including the 5K coming up this Saturday!), but it’s nice to have the half-marathon looming in the distance. I think it’s a very achievable goal if I work at it!

After my run, I took a shower and curled back up in bed with my dog. It was early and I couldn’t bring myself to pull another 10-hour day at work like I’d planned. I took a nap and later, when I got to work, I went ahead and put in for annual leave for last Monday, when I was snowed/iced in. I decided I’d prefer to take the leave rather than work crazy 10-hour days trying to make up the time.

Before my run, I had a third of a Pure cherry cashew bar, which was once again the perfect amount of food to eat. I finished the bar at work, and then I had a yogurt and a bag of peanut M&Ms for lunch because for some reason the thought of leftovers from last night turned my stomach. It was weird, but I couldn’t bring myself to eat them. I think this has happened a couple of times when I’ve had leftover sloppy joes–maybe it’s the thought of all that ketchup? I dunno.

Later in the afternoon I had another yogurt to hold me over until dinner.

It was an incredibly good dinner…
