The Big Sleep
Sorry for not posting yesterday–I came home from work, made a delicious dinner, got into bed for a nap, and didn’t wake up for a long, long time. It was blissful. I guess getting up early for my first jog since last Wednesday took more out of me than I thought it would!
I set my alarm for 5:15AM on Monday morning, since I don’t go to work until 6:45AM on Mondays, but when it went off I got up reset it for 6:15, and curled back up in bed. A few minutes later I slogged back out again, determined to actually get my run in. I took the dog out, put on my running clothes, and gulped down some water before I left. I also had about half of the Pure cherry cashew bar that I bought at Trader Joe’s last week.

I was not expecting great things from this raw bar, but it was delicious! Definitely getting more of these when I go back to Trader Joe’s. It helped keep me from feeling sick from a combination of not eating and jogging first thing in the morning. I did Week 3 of the Couch to 5K for the second time, and for the second time I didn’t quite finish–I noticed my heel was hurting when I put on my running shoes, and by the time I made it through three-quarters of the run it was feeling rather unpleasant. (Fortunately it’s been feeling much better today.)
I got right down to work once I arrived at the lab, and when I finally went for my strawberry Chobani 0% Greek Yogurt for breakfast, I forgot to take a picture of it. It was good, but not as good as the peach flavor.
Mid-morning I reached for this organic brown rice treat thing from Trader Joe’s.

It was okay, but not nearly as good as a regular rice krispy treat. Also, it was a 100 calorie bar, but man, did it seem small!
So I didn’t feel bad when, a little while later, I snagged this half of a donut after we had one of “any excuse to break for food” breaks.

Nom nom.
I’d brought the remainder of my piece of veggie lasagna from Saturday to eat for lunch, but I was not in a pasta mood at all. Instead, I just snacked on the veggies and dip I’d brought along.
And later for some protein, I tried out Trader Joe’s Omega Trek Mix, which I neglected to take a picture of, and one of those miniature chocolate soymilks from Trader Joe’s.

When I got home, I was feelingĀ in the mood for some fish and veggies, but I didn’t just want to throw something on the grill. So I used Ted Allen’s garlic herb-roasted potatoes recipe from his book The Food You Want to Eat and added in some carrots and onions. This was 45 minutes of good-smelling food–I had to stir it several times and take it out to add the garlic, and my apartment filled with delicious smells. I really loved the way the dish turned out. Normally when I roast veggies, they end up a little dry, but at the end of this recipe you dump the veeggies into a bowl and stir them up with a little more olive oil, and that really helped. While that was roasting, I made up another batch of blue cheese coleslaw, which was very good but not quite as good as the other day, since I used up all my lemonaise on the Seven Layer Salad and used Greek yogurt instead. When the potatoes were almost were done, I put a salmon fillet coated in Greek yogurt mixed with a little honey mustard dressing, parsley, and dill and baked it.

This was soooooo good. I was sad when all the fish and potatoes were gone!
And after this, I went to bed, and slept. And it was good.
